Getting started with wine making: Tip for easy sterilization, keep a spray bottle of sterilizer and spray all equipment, surfaces, hands, etc. Once it's fermented to 10%+ alcohol and has been transfered to a glass carboy with no air space, wine is very resilant. I've acquired wine in glass carboys that had been sitting for 20 years and it was perfect. To ensure excellent wine, ferment wine to hydrometer reading of 990 which will make it nice and dry.
Strange taste or smell: This is probably from equipment not being cleaned properly. Dump it out and start again, make sure everything is sterilized.
I want to sweeten my wine: Don't use sugar, use wine conditioner which we carry in store.
